I think there is some spring-back when a used head gasket is removed from an engine, so measuring the thickness of a used one will probably not tell you what the installed thickness was. On the Best Gasket website, if you look around enough, you can find that it says the gasket for the 25" engines (237, 251, 265) has a compressed thickness of 0.052". I have a new Best Gasket head gasket and its thickness varies from 0.073 - 0.80". It's copper on both sides, with some kind of more compressible material in between. Before I threw it away, I had a used head gasket that I removed from my 25" engine, and I seem to recall it being somewhere in the 0.060 - 0.070" range. It was also a double-sided copper gasket, much like the new Best Gasket that I have.
